Vegetarian, Eggplant Main Dish Recipe

Ingredients for two persons

  • 6 eggplants
  • 500 g. of tomatoes
  • 2 cucumbers
  • 3 peppers
  • vegetable oil
  • olive oil
  • salt, pepper

Cooking Procedure

  1. Peel off the eggplants.
  2. Slice and salt them. Leave it like this for 20 min.
  3. Squeeze them. Throw away the liquid.
  4. Fry the slices, in vegetable oil, 2 min on each side.
  5. Cut the rest of the vegetables and add the olive oil, the salt and the pepper.
